Executive Chef
Job Description
Hotel 4:30 (Pty) Ltd is seeking to appoint an experienced, creative and highly professional Senior Executive Chef to lead and oversee our culinary operations. We are looking for an accomplished culinary professional with a minimum of 20 years’ proven experience in the hospitality and culinary industry, preferably with extensive experience in luxury hotels, fine dining, restaurants and large-scale food operations.
Key Responsibilities
- Lead and manage the entire kitchen and culinary department.
- Develop innovative menus incorporating international and local cuisine.
- Maintain consistently high standards of food quality, taste and presentation.
- Manage food preparation and kitchen operations for restaurants, banquets, events and other hotel outlets.
- Recruit, train, mentor and supervise chefs and kitchen staff.
- Implement effective food-cost, stock-control and wastage-management systems.
- Ensure compliance with food safety, hygiene and HACCP standards.
- Manage kitchen budgets, purchasing and supplier relationships.
- Introduce new culinary concepts and continuously improve the hotel’s dining experience.
- Work closely with the General Manager and Food & Beverage Department.
- Develop and implement training and localisation programmes for the culinary team.
- Ensure efficient kitchen operations while maintaining the highest standards of luxury hospitality.
Qualifications & Experience
- Degree in Bachelor of Commerce, Tourism and hospitality management
- Minimum 20 years’ proven experience in the culinary/hospitality industry.
- Extensive experience as an Executive Chef, Head Chef or equivalent senior culinary position.
- Relevant culinary qualification from a recognised institution.
- Proven experience in luxury hotels, fine dining or high-end hospitality.
- Strong leadership, management and communication skills.
- Excellent knowledge of international and local cuisine.
- Strong understanding of food costing, budgeting and kitchen controls.
- Knowledge of HACCP, food safety and hygiene standards.
- Ability to train, mentor and develop junior chefs and local employees.
- Creative, innovative and passionate about delivering exceptional culinary experiences.
- Ability to work under pressure and manage a large culinary team.
- Excellent organisational and problem-solving skills.
